Broccoli Cauliflower Salad

Ingredients

  • 3 cups broccoli
  • 3 cups cauliflower
  • 1/2 cup red onion
  • 1/2 cups bacon
  • 1 cup Cheddar cheese

Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • salt to taste

Instructions

  • Preheat your oven to 400° degrees. Line a baking sheet with parchment paper and spread out 6 strips of bacon. Bake for 15 minutes or until crispy. Let the bacon cool and chop into crumbles. 
  • Meanwhile cut the broccoli and cauliflower into bite-sized pieces. Chop the red onion and diced the cheddar cheese. 
  • Use a medium size mixing bowl to combine mayonnaise and Greek yogurt. Add apple cider vinegar and sugar. 
  • Combine veggies, bacon, Cheddar cheese and dressing. Season with salt. Serve and enjoy!
